Ingredients to make Dahi Bhalle-

for Bhalla

  • ½ cup urad dal
  • 4 tbsp moong dal
  • add water as required
  • ½ tsp cumin
  • 1 pinch asafoetida
  • salt as required
  • oil for frying-

For Dahi Bhalla

  • 2 cups curd
  • 1/3 cup pomegranate seeds
  • 1/3 cup sweet chutney
  • 1/3 cup green chutney
  • chaat masala as required
  • Roasted cumin powder - as required
  • Red chili powder - as needed
  • black salt as needed
  • 2.5 cups lukewarm water for soaking the vadas

Method

To make soft and tasty Dahi Bhalla, first wash ½ cup urad dal and 4 tbsp moong dal twice in water. Then soak both the pulses for 4 to 5 hours.

Now filter them well. Put the dal in a grinder jar along with ½ tsp cumin and a pinch of asafoetida and grind all the ingredients into a smooth fluffy batter.

Take out the ground batter in a bowl and add salt to it. Then stir the batter vigorously by hand or with a whisk for a couple of minutes. This makes the batter light and fluffy. (To check this batter take some water in a small bowl. Add 1 tsp batter to the water. This batter should float.

Now heat oil in a wok or pan to deep fry the vadas. When the oil becomes medium hot, put it in the oil with the help of hands or spoon and fry the vadas till they become golden and crisp from both the sides.

Take out the prepared vadas on a paper towel. Then add 2.5 cups of lukewarm water and soak them for some time. Then press between your palms to extract the water from the vadas.

On the other hand, take 2 cups of fresh chilled curd in a bowl and beat it until smooth. Now slowly put these vadas in the curd and mix gently.

To serve it, take out the curd vadas in a bowl. Serve by adding green chutney, tamarind chutney, pomegranate seeds, chaat masala and cumin powder on top.
